BIROLDO FROM LUCCA

Created as a sort of meatloaf, the biroldo had the function to utilize the entrails. Nowadays it is the most peculiar salami of Lucchesia. It is prepared using different parts of a pork: head, cheek, strips of bacon and entrails such as heart, tongue and rinds: all is boiled, minced and made in sausages with pork blood flavoured with salt and spices. After a second boiling lasting several hours, it is cooled in cold stores. It is a delicious food for people loving strong tastes.
