In old times, the toughest parts of pork were cooked to be mixed and, after cooling, sliced. These are the roots of our "soppressata". After cooking, meat is broken up in irregular pieces, flavoured with salt, pepper and spices and then made into sausages in cotton cloth, where it cools to become one of the most delicious salami of Tuscan tradition.
