This salami is typical of Florentine Chianti and it's prepared with fat and lean, tender and soft meat. Thanks to its short seasoning and the particular mix of meat, it crumbles, in fact many call it "sbriciolona". The name Finocchiona comes out from the intense aroma given by the seeds of fennel (finocchio in italian) in the mixture. It is one of the most peculiar salami and it is very inviting and tender.
